There are actually many lessons from the story of the Three Billy Goats Gruff that can be derived but the main moral lesson here is "be contended of what you can have", in other words "don't be greedy".
However, it is a very conflicting issue to the popular saying "patience is the key to success". This was what probably in the mind of the troll from all of the time. He was actually patient enough to wait for a bigger sized meal despite of his terrible hunger. Out there in the field, this is actually the natural hunting instinct of an animal when hunting down their prey.
As an example, Lions don't just barge in a herd of Zebras to hunt them down. They will hide themselves down in the bushes patiently stalking their prey from a short distance away. With enough patience and right timing, they usually have 80 to 90 percent success of hunting down their prey.
Although, the only difference is that animal predators don't choose their catch. They can take down any prey that they can grabbed on unlike the troll from this story.
Going back into the story, the troll was patient enough to wait for the largest Billy Goat Gruff to come but he failed on taking it down. Instead, he was the one that got driven away off from the bridge.
Overall, the troll do have some patience but he went overboard by being too much greedy. Anyone who listened into the story will say that the troll must have benefited himself when he had chosen either the first and second Billy Goat Gruff to be eaten.
